A Ugandan Rolex has nothing to do with watches. A Rolex is a snack or light meal that is distinctly Ugandan. A Rolex is found in most districts of Uganda and on the highways. In Uganda, this is availed by on the roadside vendors at busy intersections with an umbrella for shade, a table and charcoal stove with a flat rounded metal hot-plate that they sit on the charcoal stove.
The name is derived from a roll of fried eggs in an unleavened flat bread called a chapati made from flour mixed with salt and water and which can also be cooked on a charcoal stove if you own no electronic cooker or gas cooker. In a Luganda accent (one of the languages spoken in Uganda) 'Lolekisi' better known as Rolex rather than as rolls of eggs.

INGREDIENTS OF MAKING A ROLEX:
Eggs (1-3 depending on preference your preference)
Pinch of salt
1 large (5-9") thinly-rolled Chipati (You can prepare it ahead and kept cool or at room temperature)
A small handful shredded cabbage
3-4 thin slices of tomato
Cooking oil.
HOW TO MAKE A CHAPATI
Mix flour, water, little oil (if you wish) and salt together in a bowl. Add the water to the bowl of flour, a little at a time, kneading as you go, until you have a soft, elastic dough.
Sprinkle a little of the reserved flour onto a flat surface or board.
Use your rolling wooden stick/pin to push the dough into round flat circles about 5 inches wide.
Flip the dough as you roll and make sure you add flour if it is sticking to the table or the rolling wooden stick.
Heat the pan/metal flat round hot-plate on a medium flame cooker/charcoal stove and put one tablespoon of oil on the pan.
Put the rolled out Chapati on it to cook as you flip around with your hand not to burn.

HOW TO MAKE A ROLEX:
Break 2-3 egg into a shallow cup, you can add onions and tomaroes if you wish, add a pinch of salt, and beat with a fork.
Pour the eggs onto the flat rounded metal hot plate and or rounded frying pan at least 8" thin.
Use a large spoon to rotate the eggs for even cooking and to avoid burning it.
Flip once but cook until the eggs are cooked through.
Lift eggs with a bigger spoon and place the chapati underneath the eggs and warm together for 5-10 seconds, rotating if cooking surface has uneven temperature.
Remove egg-covered chapati from heat.
In the center of the chapati you can sprinkle some cabbage, raw sliced tomatoes and onions if you wish.
Sprinkle another pinch of salt over the toppings.
Roll, first fold the right side not covered in toppings to cover toppings, then fold along center axis, and then wrap remainder around outside.
